Black Bean Omlet

What you'll need for the eggs:

* 3 Organic/Farm Raised Eggs (per omlet)

* 1/4 cup of your choice of milk (Cow, soy, oat, goat, coconut, etc)

What you'll need for omlet filling:


*1/2 can of black beans
* 1 cup of fresh cilanto

* 1 red bell pepper, diced
* 1/2 purple onion diced
* 5 table spoons of minced garlic
* Rice Shreds cheese (Cheddar)

Seasonings: (optional)

* Braggs Seasoning

* Parsley flakes
* Sea Salt - I used HimalaSalt

1.) Crack your three eggs into a bowl, add milk and hand beat until thoroughly mixed.

2.) Using a non stick pan melt two tablespoons of butter (be sure the better melts evenly on pan) on MEDIUM heat
3.) Slowly pour your eggs into the pan and let them cook for three-5 minutes. (you may need to use a spatula and lift the edge up to watch progress)
4.) On one side (see above picture) add the black beans, followed by cilantro, onion, garlic, bell pepper and cheese)
5.) With a large spatula (you may need two) careful lift up side without the ingredients and fold it over.
6.) Let cook for one more minute.
7.) Try to do a better job than I did when putting it on the plate.
